The BEST and chewiest Molasses Ginger Cookies!

Let me just say, there is nothing cozier than baking in the fall and winter! There is just something about warming up your home with homemade fresh cookies, ESPECIALLY when they smell like all the fall spices.

These are the spiced cookies of your dreams.

Super EASY recipe that gives you cookies in less than an hour!

Molasses Ginger Cookies

– 1 1/2 cups softened unsalted butter

– 1 cup granulated sugar

– 1 cup brown sugar

– 1/2 cup molasses

– 2 eggs

– 4 1/2 cups all-purpose flour

– 1 tbs baking soda

– 2 tsp cinnamon

– 2 tsp ground ginger

– 1 tsp allspice

– 1/2 tsp ground nutmeg

– 1 tsp salt

– 1/2 cup sugar for rolling cookie balls

Cream together the butter and sugars

Add molasses and eggs, and mix.

Place a sieve over your bowl of wet ingredients and put all of the dry ingredients in the sieve. Sift into bowl and mix all the ingredients together.

Chill dough for 20-30 minutes.

Preheat oven to 350 degrees.

Using a latch release medium sized scooper, scoop into hand and make a ball with the dough.

Roll ball in a bowl of sugar and place on a baking sheet that is lined with parchment paper.

Place cookie dough balls about 2 inches apart for they will spread a bit.

Place in the middle rack of your oven and bake for about 10-12 minutes.

They will look underbaked when removing them from the oven, but as they cool, they will continue baking and will get more yummy chewy cracks.

Remove cooking from oven and let them sit on the pan for 5 minutes before moving them into a cooling rack.

Let them cool on the rack for best chewiness and texture.

Store in a tight container for up to 3 days.
